Chocolate and Orange Mousse
This is one of my favourite summertime desserts and is super easy to make, for a non alcoholic version add orange juice instead of Cointreau. Also if you are not a fan of dark chocolate it works just as well with milk chocolate
Ingredients
170 g of dark chocolate
7 egg whites
40 grams of caster sugar
a dash of Cointreau
zest of half orange
- Melt the chocolate in the microwave on a low temperature so that it doesn't burn or become lumpy
- Whisk the egg whites to form soft peaks
- Add the sugar and whisk to form firm peaks(the peaks should remain even when you remove the whisk), the mixture should now look shiny.
- Mix 1/3 of the egg white mixture with the chocolate very quickly otherwise you will en up with lumps of solidified chocolate.
- Add in the remaining egg white , Cointreau and orange zest and fold in, being careful not to knock out the air from the mousse.
- Decant into dessert dishes or drinks glasses and leave in the fridge overnight
