Random Recipe

Chocolate and Orange Mousse

This is one of my favourite summertime desserts and is super easy to make, for a non alcoholic version add orange juice instead of Cointreau. Also if you are not a fan of dark chocolate it works just as well with milk chocolate

Ingredients
170 g of dark chocolate
7 egg whites
40 grams of caster sugar
a dash of Cointreau 
zest of half  orange

  1. Melt the chocolate in the microwave on a low temperature so that it doesn't burn or become lumpy
  2. Whisk the egg whites to form soft peaks 
  3. Add the sugar and whisk to form firm peaks(the peaks should remain even when you remove the whisk), the mixture should now look shiny.
  4. Mix 1/3 of the egg white mixture with the chocolate very quickly otherwise you will en up with lumps of solidified chocolate.
  5. Add in the remaining egg white , Cointreau and orange zest and fold in, being careful not to knock out the air from the mousse.
  6. Decant into dessert dishes or drinks glasses and leave in the fridge overnight
